Blondies - A True One Bowl Recipe

Blondies

When you're looking for a one-bowl treat this is a star!  




Occasionally I'll start reading a one bowl recipe and it says to mix the dry ingredients in a separate bowl, which is the exact opposite of one-bowl.  To me, one bowl means "you will wash one bowl at the end", not "all the ingredients will eventually end up in one bowl, but you'll wash three". 

These blondies are a true one bowl recipe.  You will use one bowl to mix and prepare everything and one pan to bake. No mixer required and you can customize your mix-ins.  I've used nuts, M&Ms, chocolate chips, white chocolate chips, dark chocolate chips, and mini-peanut butter cups in the past, you can use whatever is left in your pantry. You can also add a half cup of rolled oats for an oatmeal blondies.

I had some chocolate chips left over from cookies I baked with my cousins and walnuts from a Christmas recipe (don't worry, walnuts are good in the fridge for a year) so that's what I threw in this batter.

If you love the corner piece of a brownie, bake these in a square muffin pan instead of an 8" x 8". Mine is no longer manufactured but Fat Daddios and a few others make similar pans.

You can also double the recipe and put it in a 9" x 13" pan.   

Blondies- Adapted from Annie's Eats - Serves 10

8 tablespoons butter (1 stick)
1 cup of brown sugar (dark or light is fine)
1 egg
1 teaspoon of vanilla extract 
1 cup of flour
1/4 teaspoon of baking powder
1/4 teaspoon of salt 

1 cup of mix-ins of your choice 

Preheat over to 350 degrees Fahrenheit 
Using a microwave safe bowl, melt butter then set aside for 15-30 minutes to cool to room temperature.  
Stir in brown sugar
Stir in egg and vanilla extract
Stir in flour, baking powder, and salt 
Fold in mix-ins 

Square Muffin Tin
To bake in square muffin tin grease pan, making sure to pay extra attention to corners.  Bake for ~15 minutes or until edges are lightly brown.  Remove from oven and place pan on a cooling rack.  Allow to cool for at least 10 minutes before removing from pan.  

8x8 Glass or Metal Pan
Grease pan.  Bake for 20-25 minutes. Cut and squares and serve.
